Enchiladas, queso, margs…it’s too tempting, so I’m going to stop right there. Mexican food is my fav. And heaven knows I don’t need another excuse to indulge myself. So this Cinco de Mayo, I’m trying to abstain.
You see, I’m not a huge fan of healthy eating. But, I am happy to report that I’m gradually coming around. Besides the obvious health benefits, I actually enjoy cooking with fresh vegetables and eating more clean overall than ever before.
That being said, I want to share my two go-to salads with you that are absolutely delicious AND nutritious!
These salads are easy to make, or at least have easy options, while looking super impressive. Make these for your next get together and all your friends will think you’re fancy. It’ll be our little secret. Enjoy!
1 bunch of Kale (finely chopped)
Fresh Parmesan Cheese
Dressing: Mix 1/4 cup Balsamic Vinegar, 3 Tbsp Olive Oil, 1 Tbsp Seasoned Rice Vinegar, 1 Tbsp Honey and a pinch of Salt & Pepper. Drizzle over salad and serve!
Strawberries (sliced, stems removed)
Goat or Feta Cheese (whichever you prefer)
Dressing: Mix 1/2 cup Sugar, 1 tsp Dry Mustard, 1 tsp Salt, 4 1/2 Tbsp Apple Cider Vinegar, 1 tsp grated onion, 1 cup Olive oil and 1 Tbsp Celery Seed. Drizzle over salad and serve!
Notes: if you’re not into all the sugar or running short on time, balsamic also tastes great on this salad. Need help with the pecans? Here is a quick and easy version!
